Kombucha, Kefir and Ginger Bug are the three main focus points of this introductory workshop on how to ferment your own drinks at home.
Ailbhe will be taking you through the basic principles of fermenting with liquids, the harnessing of bacteria and the different processes and common grounds shared by these three delicious and beneficial drinks. The class will consist of some short demos and chats and you will then make a ‘mother’ bug together to start your own ginger bug adventures at home.
Ailbhe Walsh has been creating and nurturing all things fermented for the best part of 10 years. 18 years ago, while living and studying in Italy, she discovered her real true love – food. Inspired by the culinary culture in Italy and wanting to discover more, she travelled to Mexico, Columbia, India and Sri Lanka, tasting a variety of new and exciting flavours. This love of food led her to Ballymaloe where she studied under Darina Allen and discovered the power of fermentation. Ailbhe then honed her skills working at the Fumbally Cafe, transforming food using good bacteria to enhance its healing power and drawing out interesting new flavours. Wanting to know more about the science of fermentation and how food plays a role in health and disease, she began a 2 year Msc in Nutrition, Food and Health in UCD and followed this up with an Msc in Research at Teagasc, Trinity College and Food for Health Ireland. Ailbhe is excited to keep developing this passion and teach people about these delicious and healthy fermented foods.
